Fall Harvest is underway! These past few weeks have been a flurry of activity, as our onions reach full bulbing and require several weeks of drying to prepare them for storage. Each one is hand picked to prevent bruising like you see with mechanical harvesting. Onion tops are then trimmed, we give them an initial grading, then they go to our drying house for several weeks. This allows the outer layers to dry back, and seal the onion for many months of shelf storage.
After such a warm and dry summer, cooler nights are a definite blessing! Our root vegetables are putting on their best growth this time of year. Within several weeks, and a few light frosts, they'll have their best flavor!
